Derek's Chili

  1. Dice the bell peppers.
  2. Rinse the beans and drain them.
  3. Place a large pot (enameled cast iron is best) on the stovetop, add avocado oil (or whatever) and set to medium-high heat.
  4. Add the ground turkey to the pot.
  5. Add salt, pepper, chili powder (a decent amount to cover the meat), and some ground cayenne to the meat.
  6. Break up and sauté meat until no longer pink, but don't overcook at this step.
  7. Add the bell peppers and beans from earlier to the pot.
  8. Mix bone broth packets into hot water and add to the pot.
  9. Add the can of tomato sauce and the can of diced tomatoes (drained) to the pot.
  10. Add corn.
  11. With a fork, lightly mash about one third of all the beans against the wall of the pot.
  12. Stir, reduce heat, and simmer for at least 45 min, stirring occasionally.

Result

Makes ~7 standard mason jar sized servings. Can be stored in the fridge for probably up to 5 days, or you can freeze it for longer.

Eat plain, with rice, or with tortilla chips.

Optional substitutions or additions

You can do any or all of these things too. I used to do some of them, but ultimately felt they were no longer necessary.
